I think we have established that I hate cooking chicken. However it seems like most of my air fryer recipes actually involve chicken, like this one: Air Fryer Chicken Parmesan. And my family loved it.
My five-year-old is like the pickiest eater ever. She doesn’t like beef, or so she says. (I have seen her eat ground beef tacos and even some steak.) She LOVES chicken though. While she could eat plain chicken every day of the week, the rest of us need variety and flavor.
Chicken parm is something I know my husband would like. It’s breaded and cheesy, what’s not to love?
I was skeptical of making something like this in the air fryer, but it was remarkably easy and full of flavor.
Ingredients
- 6-8 Chicken cutlets (or chicken breasts cut into thin pieces)
- 1 cup Italian breadcrumbs
- 1 jar Marinara sauce
- 1 cup grated Parmesan cheese
- 2 cups shredded Mozzarella cheese
Instructions
- Mix Parmesan cheese with Italian seasoning
- Dredge chicken cutlets in the parm cheese/Italian seasoning mixture
- Place cutlets in air fryer and fry at 365 degrees for six minutes
- Cover top of chicken cutlet with marinara sauce and then top with shredded mozzarella cheese
- Place in air fryer for an additional 3 minutes at 365 degrees
We served this with steamed cauliflower and rice. It was simple, easy and quick to make.
The cutlets are so thin that it doesn’t take them long to cook. It’s the perfect week-day evening meal. In fact, I’m adding it to my meal plan for this week!
